Oats

Oats are a cereal that grows well in moist temperate to cool climates and thrives in conditions that would kill wheat or barley. A Highland hero for centuries, oats are the healthy, slow energy-release cereal that we cook to porridge to keep us snug all winter. Remarkably healthy, they contain as much protein as bread wheat and higher levels of fat than other cereals.

As well as warming porridge oats are used in haggis, sausages, to make a crisp coat to fry herring and occasional sweets like cranachan.
