Paneer is an fresh, non-melting curd cheese made by curdling heated milk with a lemon juice or vinegar and is common in Indian cuisine.

It has a delicate flavour and a smoothness that works well in vegetable dishes, particularly stirred into curries with spinach and peas. It marries well with spice and is great marinated then threaded onto skewers for grilling on the barbecue.

You can buy paneer in Indian grocers and some large supermarkets but it is remarkably easy to make at home and much the better for it.
