Quark

Quark

A soft, unsalted curd cheese made from skimmed milk, so very low in fat, quark is especially popular in Germany and Eastern Europe.

It's neutral taste and slightly crumbly texture makes it a good ingredient across a range of dishes from sandwich spreads and dips to baked cheesecakes. In Poland it is mixed with mashed potatoes to make the stuffing for pierogi and to make a version of gnocchi.
