Water chestnuts are the underwater corm of a variety of water grass that look like true chestnuts. The white flesh is bland, juicy and crisp - their most magical characteristic is that they retain their crunchy texture, even when cooked. They are easy to peel and easy to chop and are well worth searching out.

Available fresh or canned they are used extensively in Asian cuisine, particularly in stir fries and dumplings where their crunchy texture is highlighted.
