Asparagus heralds the arrival of spring, definitely something to love as the days get a little longer and a little brighter and food can be simple again after the comfort of big stews and soups through winter. Early in the season simple is a blessing, just a quick steam and a dollop of butter and lunch is served. As the season progresses and supplies more abundant it is gorgeous in stir fry and salads and stirred through pasta with a light béchamel sauce.
