Ingredients

  • 450 g cooking apples
  • 50 ml dry cider
  • 25 g caster sugar
  • 50 g unsalted butter
  • 1 pinches ground black pepper

Method

1. Peel, core and roughly chop the apples. Place the apples in a heavy-based saucepan with the cider, sugar and butter. 2. Put a tight fitting lid on the pan and cook slowly till pureed, approximately 10-15 minutes. 3. Season with freshly ground pepper. Pass through a sieve or liquidise using a blender. Reheat and serve.
