Ingredients

  • 2 tbsp vegetable oil
  • 400 ml coconut milk
  • 1 tbsp Thai red curry paste
  • 2 lime leaves, roughly torn
  • 300 g beef, finely sliced
  • 1 green chilli, finely chopped
  • 1 red chilli, finely chopped
  • 1 tbsp fish sauce
  • 1 tsp caster sugar
  • small handful Thai basil
  • boiled rice, to serve

Method

1. Heat the oil in a wok over a high heat and add 350ml of the coconut milk.

2. Stir in the curry paste and lime leaves.

3. Add the beef, chillies, fish sauce and sugar and stir well. Add most of the sweet basil leaves and simmer for a further 8-9 minutes, until the beef is cooked.

4. Serve with rice and garnish with fresh chilli, the remaining basil leaves and a little coconut milk.
