Carpaccio di pere e parmigiano (pear and parmesan salad)

Ingredients

  • 3 large pears
  • handful of rocket salad
  • 1 tbsp extra virgin Italian olive oil
  • salt, and freshly ground black pepper
  • 200 g parmesan

Method

1. Peel the pears and slice them very finely. Arrange them on a large flat plate overlapping each other.2. In a small bowl dress the rocket salad with extra-virgin olive oil, and then season to taste.3. Put a handful of salad in the centre of the plate. Shave the Parmesan on top and serve immediately.
