Carrot Salad

Sublime carrots combine with sugar and spice to make a delicious Moroccan salad in Sophie Grigson's simple recipe

Ingredients

Main

  • 450 g carrots, peeled and grated
  • 4 heaped tbsp caster sugar
  • juice of 1 lemons
  • good pinch of sea salt
  • 1/4 tsp ground cinnamon
  • 1 1/2 tbsp orange flower water

Method

1. Put the carrots in a large bowl.

2. Add the sugar, lemon juice, salt, cinnamon and orange flower water.

3. Leave to chill for at least an hour in the refrigerator and serve.
