Cucumber Tzatziki

Ingredients

  • 200 g Greek yogurt
  • 1/2 cucumber, peeled, grated and drained well
  • 2 tbsp roughly chopped mint
  • 1 tbsp olive oil
  • 1 clove garlic, crushed (optional)
  • grated zest and juice of 1/2 lemons
  • black pepper
  • pitta bread, to serve

Method

1. Mix together the yogurt, cucumber, mint, olive oil, garlic, lemon zest and juice in a bowl, mixing thoroughly.

2. Season to taste with salt and freshly ground pepper.

3. Serve with pitta bread.
