Ingredients

Main

  • 50 g plain flour
  • black pepper
  • 8 sardines, de-headed
  • 50 ml vegetable oil, for frying
  • wedges of limes, to serve

Method

1. Season the flour with salt and fresh ground black pepper and sprinkle it evenly over the fish.

2. Heat the oil in a frying pan over a moderate heat and fry the sardines for 2-3 minutes on each side, until crispy.

3. Serve immediately with wedges of fresh lime.
