Ingredients

  • 450 g strawberries, quartered

For the strawberry sauce:

  • 20 g butter
  • 75 g caster sugar
  • 1 lemon wedge
  • 200 g strawberries, halved

To decorate:

  • sprigs of fresh mint
  • icing sugar, (optional)

Method

1. First make the sauce. Put the butter and caster sugar in a saucepan and cook over a gentle heat.

2. Spear the lemon wedge with a fork and use it to stir the butter and sugar until the butter has melted and the sugar has dissolved. Press the lemon with the fork to squeeze out all the juice into the butter mixture, then discard it.

3. Stir in the halved strawberries, then remove from the heat and push the mixture through a sieve. Leave to cool.

4. Spoon the sauce onto four serving plates, and then top with the fresh strawberries. Decorate with sprigs of mint and sprinkle with icing sugar. Serve.
