Hot Chocolate with Vanilla Cream

Ingredients

  • 400 ml full-fat milk
  • 200 g dark chocolate, 70% cocoa solids broken into squares
  • 1 cinnamon stick
  • pinch of cayenne pepper
  • 150 ml double cream
  • 50 g vanilla sugar

Method

1. Place the milk, chocolate, cinnamon stick and cayenne pepper in a heavy-based saucepan. Heat gently, stirring, until the chocolate has melted.

2. Whip the cream with the vanilla sugar until it is semi-stiff, though not until peaks form.

3. Remove and discard the cinnamon stick. Pour the hot chocolate into four mugs, top with the vanilla cream and serve at once.
