- Prep Time: 10 minutes plus at least 24 hrs marinating

- 1 kg black olives, (with their stones)
- grated zest and juice of 2 oranges
- 10 tbsp Italian extra virgin olive oil
- 1 pinch of dried chillies, crushed
1. Place the olives, orange zest and juice in a large bowl.
2. Mix in the olive oil, chilli and salt to taste.
3. Set aside to marinate for at least 24 hours.
