Moroccan raw carrot salad

Ingredients

  • 2 carrots, grated
  • 50 g pistachio nuts
  • 50 g raisins
  • ½ bunch of mint, picked
  • 1 cloves garlic, finely chopped
  • 1 tsp Dijon mustard
  • ½ tsp cumin
  • Pinch cinnamon
  • ½ the juice of 1 oranges
  • Zest of 1 oranges
  • 3 tbsp olive oil

Method

1. To make the vinaigrette, combine garlic, mustard, cumin, cinnamon and orange juice.

2. Slowly add the oil until well combined. Season with salt and pepper. In a large bowl toss the grated carrots with orange zest, pistachios, raisins and mint and dress with the vinaigrette.
