Pesto sauce

From Tamasin Day Lewis, a classic Italian basil and pine nut sauce that can be whizzed up in minutes

Ingredients

  • 3 large handfuls of basil, roughly torn
  • 2 clove garlic
  • 2 tbsp freshly grated parmesan
  • handful of pine kernels
  • 300 ml extra virgin olive oil
  • black pepper

Method

1. Put all the ingredients in a food processor. Whizz for 2-3 minutes, scraping down the sides of the bowl often, until you have a smooth purée.
