Ingredients

  • 200 g large, raw peeled prawns
  • 1½ tbsp red curry paste
  • ½ tsp fish sauce
  • 10 g caster sugar
  • juice 1 limes
  • 6 stalks lemongrass
  • 2 tbsp olive oil

Method

1. Place the prawns in a large bowl and coat thoroughly with the curry paste.

2. Add the fish sauce, sugar and lime juice and mix well.

3. Thread the prawns on to the lemongrass stems.

4. Heat the olive oil in a pan over a medium heat and fry the prawns for 3-4 minutes, until cooked through, turning them as required. Serve immediately!
