Vin Santo Zabaglione

  • 5 egg yolks
  • 2 tbsp sugar
  • 50 ml vin santo
  • sponge fingers, such as Savoiardi such as Savoiardito serve

Method

1. Place the egg yolks, sugar and Vin Santo in a large bowl and whisk well until pale yellow and creamy.

2. Suspend the bowl over a pan of simmering water and whisk continually until the mixture becomes very light and fluffy, around 15 minutes.

3. Spoon it into 2 wine glasses and serve at once with Savoiardi biscuits on the side.
