- 1 whole tilapia, cleaned and de-scaled
- 3 limes
- 1 tbsp coarse sea salt
- 4 tbsp olive oil
1. Set the oven to 200°C/gas 6. With a sharp knife, make several slashes in the body of the fish. Squeeze the juice from 1 of the limes in to the cuts and add the salt.
2. Slice the remaining 2 limes and insert several into the body of the fish. Scatter any remaining slices over the fish and drizzle with olive oil.
3. Wrap in foil and roast for 40 minutes or so, depending on the size of the fish.
