Wholewheat cheese pancakes

Ingredients

Main

  • 60 g wholemeal flour
  • ½ tsp baking powder
  • 2 tsp light brown sugar
  • ½ tsp salt
  • 2 eggs, beaten
  • 240 g cottage cheese
  • 30 g butter
  • 400 ml Greek yogurt
  • 200 g cherry jam

Method

1. Combine dry ingredients in a large bowl and stir in the eggs and cheese.

2. Heat a heavy frying pan or griddle until moderately hot and add a little butter. Drop tablespoons of batter into the pan and cook until dry on top. Flip the pancakes and cook until golden.

3. Serve the pancakes hot with Greek yoghurt and cherry conserve.
