There are several varieties of date and means of production. Most delicious are the loose wrinkly sun-dried varieties such as Medjool and Deglet Noor, sometimes called 'dessert' dates. These have a rich toffee-like taste and texture and are delicious. Dates go well with nuts and marzipan, with bananas, dairy products such as cream cheese, yogurt and custard, and starchy foods such as oats, pastry and couscous.
Chop and add to bread mixtures, fruit loaves and cakes, muffins and cookies. Use in rich desserts such as sticky toffee pudding and steamed date pudding. They combine well with bananas, pecans and almonds, cinnamon, chocolate and cream.
They are not restricted to sweet dishes and taste wonderful when wrapped in bacon.
