Yuzu Kosho

Yuzu kosho is a red hot citrusy Japanese paste made from chilli peppers, the zest of yuzu (a citrus fruit) and salt. This salt-cured condiment is intensely fragrant and hot like a Japanese cross between ketchup and tabasco.

Use it with grilled fish or meat, steamed vegetables, add it to soy for a spiky dipping sauce and try small dollops in soups and noodles.
