Heat a frying pan until it is hot, but not smoking. Drizzle some oil onto the steak and season with a little salt and pepper.
Place the steak in the pan and cook until nicely coloured on one side and then turn and repeat on the other side.
A good way to test the doneness of your steak it to use your fingers. For rare steak, pinch your index finger and thumb together. Feel the fleshy part of your palm below the thumb and this should have the firmness of a rare steak. For medium-rare, do the same thing with the middle finger and thumb; for medium-well - the ring finger and thumb; and for well-done - the little finger and thumb.
When the steak is ready it is very important to allow it to rest as otherwise it could be tough.
