How to make salsa verde

Place chopped garlic into a bowl with chopped anchovies, capers, gherkin, parsley, mint, tarragon and some Dijon mustard and stir together. Pour in red wine vinegar, extra virgin olive oil and season with a little salt and pepper.

The salsa verde should have a loose texture a bit like pesto, so add more oil if it's too thick. Serve with grilled fish or steak.
