James Martin demonstrates a quick and easy method to spatchcock a chicken, perfect for the barbecue.

How to spatchcock a chicken

Remove the winglets with scissors.

Turn the chicken on its back. Insert the scissors underneath in the cavity and cut through an inch either side of the large bone. Remove the bone.

Turn it the other way up and place two skewers going from the breast into the leg, the thigh and out the other side.
