Budae Jjigae / Army stew

Ingredients

Ingredients

  • 1 pack of Korean instant noodles
  • 150g spam, cut into 5cm squared
  • 5 hot dogs, sliced into 5cm slices
  • 35g straw mushrooms
  • 1 tbsp gochujang
  • 2 garlic cloves finely chopped
  • 100g cabbage kimchi, roughly chopped
  • 5 spring onions, cut into 5cm lengths
  • Water to cover
  • White pepper
  • 3 slices of processed cheese

Method

1. Place the instant noodles in the bottom of a large saucepan. Any instant noodles would really work in this recipe, but Korean instant noodles have a much better texture than a standard pot noodle style noodle.

2. Layer the other ingredients on top – Spam, hot dogs, mushrooms, chopped kimchi (plus some kimchi juice) and all the remaining items. Cover with water and simmer until the noodles are soft

3. When cooked, add the cheese, broken into pieces, and stir in to thicken the sauce.
