Ingredients 150g caster sugar 50ml water 60ml lemon juice Capful of rosewater Tbsp honey 200g blanched almonds 200g walnuts 200g pistachios Cinnamon Packet of ready-made filo pastry Melted butter To Serve: Poached or fresh figs


Method 1. To a small pan on a low heat, add the of caster sugar, water, lemon juice and rosewater. Bring it to the boil so the sugar dissolves, and then becomes sticky. 2. When it bubbles up, and sticks to the spoon, stir in a tbsp of honey, and take it off the heat to let it cool. 3. Whilst the sugar syrup is cooking, chop the blanched almonds, pistachios, and walnuts. Put the nuts in a bowl and sprinkle with a pinch of cinnamon. Reserve some for the garnish. 4. Unroll your filo pastry, and place your flan tray on top, and cut around the shape of the tray in the pastry. 5. Brush butter all over one layer of pastry, and place in the tray butter side down. Repeat until you have 6 layers. 6. Push down the corners. 7. Pour half the sugar syrup in to the bowl of nuts and mix together. 8. Place the whole mix on top of the pastry in the tray and smooth it out. 9. Place six more layers of buttered pastry on top, tucking the edges in. The first 5 layers with butter facing down, and the last layer with butter facing up. 10. Sprinkle the reserved nuts on top of pastry. 11. Using a sharp knife, cut the pastry diagonally to form diamond shapes. 12. Place in an oven preheated to 180’C for 20 minutes. 13. Remove baklava from oven, and whilst still hot, pour over remaining sugar syrup, which has cooled and become stickier – amount depends on how sweet you want it! 14. Serve with the figs
