Ideally when using the absorption method, basmati rice should be soaked in cold water for 30 minutes. After that, rinse it to get rid of the excess starch that can make your rice a bit too stodgy. When the water runs clear it’s ready. Put 2 measures of water to 1 measure of rice into a pan and bring to the boil. Reduce the heat to low, cover and simmer for 10-12 minutes. By this time all the water will be absorbed. It’s really important not to take the lid off until the rice is ready as this will let out the steam that is cooking it. Avoid the temptation to stir too. Once it is ready, take off the heat and allow to stand for 5 minutes. Finally, fork through gently for perfect, light basmati rice.
