Don't be put off the bones in sardines, as James Martin demonstrates how to prepare these tasty little fish and remove all the bones.
Take a little knife and cut a long slit underneath the sardine. Turn the fish so the belly sits flat on a cutting board and press gently all along the spine. Turn it over again and slide your fingers under the start of the bone, and lift the bone out. If you lift it out in one piece you'll remove all the bones in the sardine.
To grill a sardine, place them on a griddle pan, belly side down, coat with a little olive oil, salt and pepper and grill for 1-1.5 minutes.
