American-style pancakes with spiced apple

Ingredients

For the spiced apple

  • 2 tbsp butter
  • 3 bramley apples, peeled and diced
  • 3 tbsp demerara sugar
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice

For the brown sugar yogurt

  • 6 tbsp Greek yogurt
  • light soft brown sugar, to taste

For the pancakes

  • 225 g plain flour
  • 1 tbsp baking powder
  • 1 tsp caster sugar
  • 1 pinches salt
  • 2 eggs, lightly beaten
  • 300 ml milk
  • 2 tbsp butter, melted
  • oil, for frying

Method

1. For the spiced apple: melt the butter in a saucepan over a low-medium heat. Add the apples, sugar, cinnamon and mixed spice and cook gently for 8-10 minutes, stirring occasionally, until the apple begins to soften and break down. Set aside to cool.

2. For the brown sugar yogurt: sprinkle the brown sugar over the yogurt and set aside. The sugar will dissolve into syrupy streaks.

3. For the pancakes: tip all the pancake ingredients into a bowl and blend using a stick blender (alternatively use a hand whisk).

4. Heat a little oil in a frying pan over a medium heat and fry ladlefuls of the batter for 1-2 minutes on each side, or until puffed and golden brown. Repeat until you have used all the batter.

5. To serve, arrange the pancakes in a stack, topping each with a spoonful of spiced apple followed by a spoonful of brown sugar yogurt.
