Apple and almond cream tart

Apples and a rich almond filling combine to delicious effect in Amy Wilcock's simple recipe for a fruit tart

  • 250 g shortcrust pastry
  • 55 g unsalted butter
  • 55 g icing sugar
  • 55 g ground almonds
  • 1 egg
  • 1 tbsp double cream
  • 450 g apples, peeled and sliced


1. Roll out the pastry finely and use it to line a 20cm flan tin.

2. In a mixing bowl, combine the butter sugar, almonds, egg, and double cream to a thick paste.

3. Pour mixture into the pastry case and layer the apple slices neatly on top.

4. Place the tart on the floor of the roasting oven and bake for 20 minutes, until puffed up and golden, checking after 10 minutes. If the tart is browning too quickly, move it to a plain shelf on the bottom set of runners.

5. Serve warm or cold.
