Apple and Oat Betty with Lemongrass Custard

Ingredients

  • 3 cooking apples
  • 1/2 lemon, juice only
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1 tbsp apple juice
  • 100 g almonds, chopped
  • 100 g rolled oats
  • 1/2 tsp baking powder
  • 2 tbsp maple syrup
  • sunflower oil, for greasing

Method

1. Preheat the oven to 180C/gas 4. Lightly oil 4 large ramekin dishes.

2. Peel, core and slice the apples, and place in a large mixing bowl. Add the lemon juice, ginger, half the cinnamon and the apple juice. Mix well and spoon into the ramekins.

3. Combine the nuts, oats, remaining cinnamon, baking powder and maple syrup, and sprinkle over the apples.

4. Bake for about 20 minutes, until the topping is crisp and golden.
