Asian dressing

This piquant Asian-inspired dressing packs a fabulous punch over British salad ingredients

  • 2 cloves garlic, finely chopped
  • 1 red chillies, seeds removed, roughly chopped
  • 1cm root ginger, grated
  • 1 tbsp palm sugar
  • 2-3 tbsp fish sauce
  • 1-2 limes, halved
  • 1 splashes water
  • 2 shallots, thinly sliced

To serve

  • 1 handfuls cos lettuce
  • 1 handfuls cherry tomatoes, halved
  • mixed fresh herbs, such as basil, mint, flat-leafed parsley, coriander and chives
  • 1 small handfuls chopped peanuts


1. Put the garlic, red chilli, ginger, palm sugar, fish sauce, limes, water and shallots into a pestle and mortar. Mash together well, making sure the garlic and chilli have been pounded into a pulp. Remove the lime halves.

2. Arrange the lettuce, tomatoes and herbs in a salad bowl and pour the dressing over. Toss well and scatter with the peanuts. Serve straightaway.
