Baked mozzarella and goats cheese tartlet salad

Ingredients

main:

  • 160 g puff pastry
  • 80 g goats' cheese, crumbled
  • 80 g mozzarella, crumbled
  • 4 tomatoes
  • 1 egg, beaten
  • 80 g mixed salad leaves, to serve

Method

1. Set the oven to 200°C/gas 6. Thinly roll out the pastry and cut 4 circles, each about 10cm in diameter.

2. Divide the goats' cheese and mozzarella equally between the tartlets and arrange evenly on top.

3. Top with tomatoes slices.

4. Brush the edges of the pastry with the beaten egg and bake for 10 minutes.

5. Serve with mixed salad leaves.
