Baked new potatoes with blue cheese

Baked new potatoes with blue cheese is an easy side dish recipe to serve at dinner parties or BBQs

  • 12 medium new potatoes, such as Cornish new potatoes
  • 1 tbsp olive oil
  • 200 ml double cream
  • 1 lemon, juiced
  • 200 g blue cheese, crumbled
  • bunch of chives, chopped
  • 2 egg yolks
  • rocket, to serve


1. Preheat the oven to 180C/160C fan/gas 4. Season the potatoes well with salt, then put onto a baking tray or heatproof oven dish and cook in the oven for 30 minutes or until the potatoes have softened.

2. Carefully cut a cross into the potatoes, squeezing to open them up a little. Drizzle with oil and season with salt and pepper.

3. In a bowl, mix together the cream, lemon juice, cheese, chives and egg yolks in a bowl. Spoon the mixture into each of the potatoes and put under a hot grill until melted.

4. Serve the potatoes with fresh rocket leaves.
