Baked porridge

Bill Granger adds sugar, spice and all things nice to his porridge for a far from average breakfast

Ingredients

  • 135 g porridge oats
  • 75 g hazelnuts (without skins) or pecans, roughly chopped
  • 75 g roughly chopped dried figs or sultanas
  • 3 tbsp soft brown sugar
  • ' tsp ground cinnamon
  • 650 ml milk
  • 200 ml double cream
  • 1 tsp vanilla extract

Method

1. Preheat the oven to 150C/130C fan/gas 2. Scatter the oats, nuts, dried fruit, 1 tablespoon of the sugar, a pinch of salt and the cinnamon. Then, toss it all together.

2. Pour in the milk, cream and vanilla extract, stir and bake for 45 minutes.

3. Sprinkle with the remaining sugar and put back in the oven for another 15 minutes to let the top crisp up.
