Baked tapas

  • 500 g strong bread flour
  • 12 g salt
  • 25 g yeast
  • 30 ml olive oil
  • 290 ml warm water
  • 1 egg, beaten
  • grated parmesan

A selection of Mediterranean style vegetables in olive oil to include

  • chillies
  • avocados
  • peppers
  • borretane onions
  • grilled tomatoes
  • porcini
  • feta cheese, and roasted sweet red pepper

A selection of cheeses to include

  • mozzarella
  • gruyère cheese
  • parmesan
  • cheddar cheese
  • brie


1. Sieve the flour and salt into al large bowl. Add the yeast and olive oil, and enough water to form a smooth, pliable dough. 2. Turn the mixture onto a floured work surface and knead for 5 minutes. Return the dough to the bowl, cover with cling film and then leave to rest for 1 hour. 3. Lightly grease a baking sheet.4. Divide the dough into 5 pieces and roll each piece into a rectangle measuring 18x10cm.5. Spoon a little of the anti-pasti products into the center of each and top with a little cheese.6. Roll the bread up 'Swiss roll' style and cut into 5cm slices.7. Place the slices on the prepared baking sheet, flat side down, to form a circle and leave to rise for 45 minutes. Set the oven to 220°C/gas 8.8. Brush each piece with a little beaten egg and sprinkle with grated Parmesan.9. Bake for 20 minutes.
