Banana cake

Donna Hay's banana cake is drizzled with caramel sauce to make an easy but impressive cake

For the banana pudding

  • 175 g butter, softened and chopped
  • 175 g brown sugar
  • 110 g caster sugar
  • 1/2 tsp ground cinnamon
  • 3 medium or 2 large bananas, mashed
  • 3 eggs
  • 300 g self-raising flour
  • 1/2 tsp baking powder

For the caramel sauce

  • 375 ml single cream
  • 135 g brown sugar


1. Preheat oven to 170C/150C fan/gas 3½.

2. For the cake: Place the butter, sugars, cinnamon, banana, eggs, flour and baking powder in the bowl of an electric mixer and beat on medium speed for 1 minute or until just combined. Pour the mixture into a greased 28cm x 8cm loaf tin lined with non-stick baking paper and bake for 1 hour or until cooked when tested with a skewer.

3. To make the caramel sauce: place the cream and brown sugar in a saucepan and simmer for 10 minutes or until thickened. Slice the cake and pour over the warm sauce.
