Banana Cinnamon Nut Muffins

Banana Cinnamon Nut Muffins

Ingredients

  • 2 large eggs
  • 125 ml vegetable oil
  • 200 g brown sugar
  • 1/2 tsp vanilla essence
  • 2 bananas
  • 250 g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 100 g walnuts, chopped

Method

1. Preheat the oven to 180C/gas 4. Lightly oil a 12-cup muffin tin. Mix the eggs, vegetable oil, sugar and vanilla together in a large bowl.

2. Stir in the mashed banana.

3. In a separate bowl, sift together the flour, baking powder, baking soda, salt and cinnamon.

4. Stir the dry ingredients into the wet ingredients until just combined. Gently fold in the nuts.

6. Spoon batter into the prepared muffin tin and bake for 20-25 minutes, until risen and springy. Serve warm.
