Banana fudge ice cream sundae

Banana fudge ice cream sundae

For the fudge sauce

  • 340 g caster sugar
  • 100 g brown sugar
  • 85 g cocoa powder
  • 30 g plain flour
  • 1 x 410 g can evaporated milk
  • 2 tbsp butter
  • 2 tsp vanilla extract

For the sundae

  • 175 ml double cream
  • 2 bananas
  • 4 scoops vanilla ice cream
  • 4 scoops chocolate ice cream
  • 1 handful caramel fudge, pieces
  • 100 g chocolate chips
  • 4 tbsp toasted pecans, chopped
  • 100 g mini marshmallows
  • 4 glacĂ© cherries, to decorate


1. For the fudge sauce: combine the caster sugar, brown sugar, cocoa powder, flour and salt in a saucepan. Add the evaporated milk, 225ml water and butter. Cook over medium heat, stirring continuously, until the mixture is smooth and comes to the boil.

2. Cook the fudge sauce for a further 4-5 minutes, then set aside to cool. Stir in the vanilla extract.

3. For the sundae: whip the double cream until soft peaks form. Peel and thickly slice the bananas at an angle.

4. To assemble the sundae, place a scoop of vanilla ice cream and a scoop of chocolate ice cream into each sundae glass, and decorate with some of the caramel fudge, chocolate chips and toasted pecans. Spoon over the whipped cream and decorate with the remaining sundae ingredients. Drizzle over the hot fudge sauce, decorate with the mini marshmallows and place a glace cherry on top.
