Banana latte bread

  • 300 g plain flour
  • 1 tsp bicarbonate of soda
  • 110 g soft butter
  • 125 g sugar
  • 2 eggs
  • 4 ripe bananas, mashed
  • 85 ml milky coffee


1. Preheat the oven to 180C/160C fan/gas 4 and grease a 20x12cm loaf tin.

2. Sift the flour, bicarbonate of soda and 1 teaspoon of salt into a large mixing bowl. In a separate bowl, use a hand mixer to beat the butter and sugar together until light and fluffy.

3. Add the eggs, mashed bananas and coffee to the butter and sugar mixture and stir well. Fold in the flour mixture. Do this gently; you dont want to overwork the flour and have it turn out tough.

4. Tip the mixture into the prepared loaf pan. Bake in the preheated oven for about 1 hour, or until well risen and golden brown. Remove from the oven and allow to cool in the pan for a few minutes, then turn out onto a wire rack to cool further before serving.

5. Serve with a coffee on the side and perhaps with some ricotta or butter over the top.
