Bara brith and butter pudding

Bryn Williams makes a tasty alternative to Christmas pudding - and feeds four for less than a fiver!

  • 100 g caster sugar
  • 1 litres milk
  • 6 eggs
  • 1 whole bara brith
  • 50 g unsalted butter
  • 1 vanilla pod
  • 20 g brown sugar


1. Preheat the oven to 140C/gas mark 1. Cut the bara brith into 1cm slices, removing the crusts, and cut each slice into triangles and then spread with the butter.

2. Neatly arrange the bara brith in an ovenproof serving dish. Whisk the eggs and the sugar together. In a saucepan, bring the milk and the vanilla pod to the boil. Pour the warm milk on the eggs and sugar and whisk. Pass the mix through a fine strainer, and pour over the bara brith. Dust with the brown sugar.

3. Place the dish in a roasting tray half full of almost-boiling water and bake for 40-50 minutes. Serve with custard or double cream.
