Barbecued Bison

Ingredients

  • 1.2 kg bison steaks

For the marinade

  • 4 limes, juice only
  • 2 lemons, juice only
  • 1 grapefruit, juice only
  • 2 oranges, juice only
  • 3 sprigs rosemary, chopped
  • 6 sprigs sage, chopped
  • 1 tbsp low-salt soy sauce
  • 3 tbsp thyme, leaves onlychopped
  • 1 onion, sliced
  • 1 bulbs garlic, minced
  • 1 tbsp black peppercorns, ground

Method

1. Lay the bison in a non-reactive dish.

2. Mix all the ingredients for the marinade together and pour over the bison. Leave to marinade for at least 15 minutes, preferably longer.

3. Barbecue or grill for 5-10 minutes, until cooked as desired. Leave to rest for 2 minutes and serve hot.
