Ingredients

  • 2 kg basil, leaves picked
  • 2 tbsp olive oil

Method

1. Blanch the basil and refresh in ice water then squeeze dry.

2. Place all ingredients in robot-coupe and blitz for 2-5 minutes, push through a fine sieve making sure you get every drop out, allow to drain through 2 coffee filters, then store in kilner jars.
