BBQ halloumi

Simon Rimmer's grilled halloumi cheese with spiced-up coleslaw makes a great vegetarian option for the barbecue

Ingredients

  • 12 pieces halloumi cheese
  • 3 tbsp jerk seasoning
  • olive oil

For the coleslaw

  • 1 red onion
  • 1 heads celery
  • 2 carrots
  • 1 red bird's eye chilli
  • 1 tbsp coriander leaves, chopped
  • 25 g peanuts, toasted
  • 1 handfuls bean sprouts
  • 1 lime, juice only
  • 3 tbsp mayonnaise
  • salt and black pepper, to taste

Method

1. Toss the halloumi cheese in jerk spices, then brush with oil and barbecue for 2 minutes on each side.

2. For the coleslaw, finely slice the onion, celery, carrot and chilli. Combine them with the lime and mayonnaise and toss together with the remaining ingredients.

3. Serve the grilled halloumi with a generous helping of coleslaw.
