Beetroot and mint yogurt salad

Beetroot and mint yogurt salad

Ingredients

  • 250 g cooked beetroot
  • 5 tbsp Greek yogurt
  • 1/2clove garlic
  • 1 tsp red wine vinegar
  • bunch ofbunch of mint
  • salt

Method

1. Mix the yogurt with the vinegar. Slice the beetroot and finely chop the mint leaves and garlic.

2. Add the beetroot, mint and garlic to the yogurt with a pinch of salt, and serve.
