Ingredients

  • 700 g potatoes, peeled and cut into chips
  • vegetable oil, for deep-frying
  • salt
  • mayonnaise, for serving

Method

1. Pat the potato chips dry with a clean, dry tea-towel.2. Heat the oil for deep-frying in a wok or deep fat-fryer until medium hot, 160°C if using the fryer.3. Add in the chips and fry for 5-6 minutes, removing them with a slotted spoon before they colour. Set aside to cool.4. Heat the oil for deep-frying until extremely hot. Add in the chips and fry for 3 minutes until crisp and brown.5. Pat the chips dry with a clean, dry tea-towel. Season with salt.6. Serve with mayonnaise.
