Broccoli soup

Gary Rhodes uses broccoli from Highgate Florist and Growers to make this quick, warming and healthy soup

  • 1 drizzle of olive oil
  • 1 large knob of butter
  • 1 onion, finely chopped
  • 450 g broccoli, roughly chopped
  • 1 litres boiling water


1. Heat the olive oil and butter in a large saucepan over a medium heat, add the onion and fry gently for 4-5 minutes, until softened but not coloured.

2. Add the broccoli to the onions and pour over enough of the boiling water to cover the vegetables generously. Season with salt and simmer, half-covered, for 3-4 minutes or until the broccoli is just tender.

3. Remove from the heat and blend the soup until smooth. Season, to taste, with salt and freshly ground black pepper and serve.
