Brussels sprouts chiffonade

Finely shredding brussels gives an elegant new twist to the classic sprouts-and-bacon combination

Ingredients

  • 300 g brussels sprouts, trimmed
  • 1 tbsp olive oil
  • 20 g butter
  • 2 shallots, finely chopped
  • 1 cloves garlic, crushed
  • 50 g smoked bacon, chopped

Method

1. Using a food processor shredding attachment, or a knife, finely shred the brussels sprouts.

2. Heat the oil and butter together in a frying pan. Add the shallots, garlic and bacon and cook for 3-4 minutes, until the shallots have softened.

3. Add the chiffonade of brussels sprouts and sauté for 5-10 minutes, until the leaves are cooked through.
