- 1 butternut squash, skin removed and cut into large cubes
- 1 garlic clove
- 2 strips of orange zest
- 100 ml extra virgin olive oil
1. In a steamer or steamer pot add the pumpkin, garlic and orange zest. Steam for about 20 minutes or until the pumpkin is soft.
2. Once cooked, place squash, garlic and orange zest in a food processor and blend. With motor still running slowly add the olive oil. Finally season with salt and pepper.
