Butternut squash puree

Flavoured with orange, garlic and squash, this puree recipe from Justin Schofield makes an interesting side or can be used in soups, pasta or risotto dishes

Ingredients

  • 1 butternut squash, skin removed and cut into large cubes
  • 1 garlic clove
  • 2 strips of orange zest
  • 100 ml extra virgin olive oil

Method

1. In a steamer or steamer pot add the pumpkin, garlic and orange zest. Steam for about 20 minutes or until the pumpkin is soft.

2. Once cooked, place squash, garlic and orange zest in a food processor and blend. With motor still running slowly add the olive oil. Finally season with salt and pepper.
